These mini omelet with chicken and vegetables are great for breakfast or even dinner. I don't know about you, but sometimes I don't know what to cook for breakfast. I usually make scrambled eggs or scrambled eggs and when we want to pamper ourselves, I do French pancakes. However, sometimes we are on the run or I don't have the necessary condition to make a proper breakfast, so I use these mini omelettes with confidence.
I make 12 pieces, then I put them in the fridge and if necessary I just heat them in the oven. Add some fresh vegetables, tea or coffee and breakfast is ready. This recipe for mini omelettes with chicken and vegetables are excellent for busy mothers because they can be prepared beforehand and can only be reheated when needed. They are very good and cold or at room temperature with a slice of toast or a fruit.
What I like most about this recipe is that it can be customized extremely easily. We can put absolutely anything in these mini omelets. You can put any kind of meat you have left in the fridge, any kind of cheese or cheese and not to mention vegetables. You can add any vegetables you want, both cooked and raw. Peas, broccoli, corn, zucchini, green beans and any other vegetable you want. To prepare these mini omelettes with chicken and vegetables you just have to beat eggs with milk.

- Green onions, wash, clean and cut into slices as thin as possible.
- Beat the eggs with a pinch of salt and then add the onion.
- Pass the cheese through a grater or cut into small cubes and add to the omelet composition.
- Grease the muffin tray with butter or sprinkle with a little oil, pour the omelette composition and leave for 15 minutes in the preheated oven.

6. Pour the egg mixture and bake the omelet at 180 degrees until lightly browned.

Chicken breast roll with omelet
Even though many consider chicken breast to be fairy, even boring, I really like it. First of all, it is a staple food for athletes, and for those who care about their figure. Secondly, it can be very tasty, if you have a little imagination and cook it properly. I have an example here, this absolutely delicious and juicy roll.
- a whole chicken breast (boneless and skinless)
- 2 eggs for the omelet
- an onion, also for the omelet (or leek)
- 2 slices of cheese
- something white wine
- salt, chest
- spices: a tablespoon of paprika, 1/2 tablespoon chilli, 1/2 tablespoon oregano, 1/2 tablespoon dried thyme, a tablespoon of garlic powder, and if you have 1/2 tablespoon of onion powder

Let's prepare a very tasty and unusual roll together! It cooks easily, quickly and disappears immediately from the plate!
-salt, ground black pepper - to taste
-½ canned green olives, without seeds
-200 g of Champignon mushrooms
-a chicken breast (boiled in slightly salted water)
-a tablespoon of fermented cream
-a few lettuce leaves
-1-2 tablespoons oil (for greasing baking paper and frying mushrooms).
METHOD OF PREPARATION:
1.Prepare the omelet: beat the eggs until smooth. Add the grated cheese and stir.
2.Cut the green olives into rounds.
3.Add the chopped olives, salt and ground black pepper to taste in the egg mixture. Stir.
4. Transfer the omelet composition to a rectangular tray (25 x 30 cm), lined with baking paper, greased with a little oil. Spread it evenly, arranging the olive slices at the same time, so that the top is straight and good-looking.
5. Bake the omelette for 15-20 minutes in the preheated oven to 180 ° C.
6. In the meantime prepare the filling: cut the cleaned mushrooms into cubes and place them in a hot, oil-free pan. Fry them until all the liquid has evaporated, which they will release. Then add a tablespoon of oil and fry them for another 3 minutes, until they start to brown.
7. Cut the chicken breast, which you have previously boiled, into cubes or break it into small bundles of fibers.
8. Remove the omelet top from the oven and turn it over immediately on a piece of aluminum foil. Remove the baking paper from its surface.
9.Assemble the roll: evenly grease the omelet top with cream cheese mixed with a tablespoon of fermented cream.
10. Spread the chicken evenly over its surface.
11. Cover the layer of meat with lettuce leaves (washed and dried beforehand).
12. Spread the fried mushrooms on the salad leaves.
13. Carefully roll the omelet top into a roll.
14. Wrap the roll in aluminum foil, pressing it lightly with your hands. Refrigerate for about 2 hours to become stable.
15.Portion it and serve it.
You can experiment with the filling of the roll, adding pickles, lots of greens or other ingredients that you like. We recommend that you prepare it!
