The meringue top : Beat the egg whites with a salt powder mixer. Gradually add a tablespoon of sugar, waiting until the crystals are perfectly melted. We do this until we have added all the sugar. At the end, add the lemon juice, stirring until incorporated. Wallpaper with baking paper that I greased a 26 cm shape with butter and carefully pour the meringue. Put in the oven at 120 degrees for three, four hours. Normally, electric ovens are baked evenly and the meringue remains white. For those who have a gas stove, it's harder, at least for me, the flame does not burn constantly.

Cream : Mascarpone mix with powdered sugar and add the jam, mixing well. Whip the cream and pour over the cream above.

For the syrup boil the 200 gr of raspberries together with the sugar. When they have softened, they are passed through a sieve and left to thicken for a few more minutes. You can try with a teaspoon if the syrup has bound. From my point of view, it doesn't matter if it stays more liquid.

Assembly : Sprinkle the cream over the meringue top and place the raspberries and mint leaves. Then pour the syrup over it.

Pavlova with raspberries - Recipes

Raspberries are tasty all year round, whether fresh or frozen. These "gemstones" of nutrition are not only delicious and versatile, but also have an impressive nutritional profile, which makes them one of the healthiest products on the shelf. We have prepared for you a list of 5 health benefits of raspberries, but also simple ways to include it in dishes or snacks.

Raspberries have a lot of nutrients

A cup of raspberries provides over 50% of the required daily intake of vitamin C, which supports immunity, skin health and contributes to the production of collagen. Raspberries also contain manganese and vitamin K, both of which play a key role in bone health. Other nutrients include vitamin E, vitamin B, magnesium, copper, iron and potassium.

It has a low amount of sugar

Raspberries are one of the fruits with the lowest sugar content, having only 5 grams / cup, compared to apples, which each have 20 grams. This makes them the ideal choice for those who crave sweets, but want to reduce their sugar intake.

It is rich in anti-aging antioxidants

Raspberries are a real plant of antioxidants. They are responsible for reducing the risk of heart disease, diabetes and obesity. Antioxidants in raspberries also help reduce inflammation, a real trigger for the aging process.

Raspberries are high in fiber

One cup of raspberries contains about 8 grams of fiber, a third of the daily requirement. This high fiber content contributes to the feeling of satiety, normalizes blood sugar levels, slows down digestion and supports the digestive system. Raspberry fiber also helps the development of bacteria in the intestinal flora, beneficial for digestion.

Raspberries improve your brain activity and memory

Raspberries help fight oxidative stress, which is an imbalance between the production of free radicals harmful to cells and the body's ability to fight them. Due to the fact that oxidative stress is a decisive factor in conditions such as Alzheimer's or Parkinson's, raspberries are a top food when it comes to brain health. The flavonoids in its composition help coordination, memory and mood.

How to add more raspberries to your meals

Raspberries are a tasty addition to many dishes and go well with both sweet and savory foods. Add them to porridge, oats, summer salads, whole grain garnishes and desserts. Turn them into a colorful puree or sauce that will go with anything: from banana pancakes to grilled fish or vegetable dishes. Stored in the freezer, raspberries will be ideal in smoothies or fresh.

Now that you have learned all these benefits of raspberries, it's time to add it to your dishes or enjoy it as a tasty and nutritious snack.

How to make a pavlova with lemon curd, raspberry and pistachio in 5 simple steps

There is no more seductive, more decadent, more summer dessert effortless chic than a pavlova with a crispy coating and a soft core, which you smeared with cream and over which you then threw & # 8211 slightly carelessly, a little studied & # 8211 a few handfuls of well-ripened fruit.

My love for meringues is not new & # 8211 I had a childhood in which every important moment was marked with a plate full of small cakes made of white beaten with sugar. They were my favorite dessert (along with anything deep fried, ofc -). So it's absolutely normal for me to look for the perfect option even now.

Since I never liked whipped cream, I always tried alternative options for pavlova. This is the one I liked the most. For me, the combination of sweet meringue, sour cream and aromatic fruits is perfect. And the pistachio sprinkled on top adds a new dimension to the final aroma, balancing the taste with a slightly deeper note.

But enough about this, get to work:

ready this meringue composition. Take a baking sheet and draw a circle in the shape of a plate. Place the paper on a tray and place the composition inside the circle. Bake in the oven at 110 ° C for two hours. After baking, let it cool overnight in the oven, with the door ajar.

ready lemon curd according to this recipe. After you have cooled it in the fridge, spread it over the meringue.

Add two handfuls of fresh raspberries.

Sprinkle a handful of chopped pistachios

You die of pleasure. Dada, that's exactly what happens. Then you start over, because you can't do otherwise. Too much of a good thing is never enough. In my humble opinion.

Ingredients Pavlova with raspberries and sea buckthorn

4 egg whites (at room temperature)
200 gr vanilla powdered sugar (bought because it has starch if you grind the sugar, add 10 gr starch to 190 gr caster sugar and then grind)
2 teaspoons vinegar
1 salt outlet

Sea buckthorn syrup

Raspberry coulis

50 gr raspberries
2 teaspoons sea buckthorn syrup

200 ml whipped cream
150 gr fresh raspberries
mint leaves
powdered sugar (vanilla)

Pavlova with vanilla and red fruits

One of the things you have to learn in confectionery and not only is respect for ingredients. This also translates to avoiding waste, whether we are talking about chocolate or we are talking about eggs, sugar or flour. Waste can be avoided by using recipes from reliable sources, by a very good organization of the recipe steps, by increased attention, but also by keeping or reusing the ingredients or leftovers that result from a recipe. This last category also includes egg whites. I don't know about you, but I always have egg whites in the freezer. Sometimes I use them for this cake, other times I make macarons, but this time I wanted something lighter, airy, not heavy for the taste buds, something tasty, easy to make and that does not require a long time in the kitchen & # 8230. and I chose this wonderful Pavlova, a cake that makes me think of summer, sun, friends.

Pavlova is a dessert that comes on the Australian chain and consists of a meringue that is cooked so that inside it is soft, but crispy on the outside. Cover with a vanilla, chocolate or fruity cream and lots of fresh fruit on top or peanuts, nuts, candied fruit, depending on the season.

I must admit that this time I had a reliable help in the kitchen: Electrolux Kitchen Assistant Pro - a beauty mixer that does most of the work alone!
