Yummy and oh so easy. The only thing I would add to the instructions is to cook the stems first, then add the leaves a few minutes later. That way, the stems aren't over-cooking while you are waiting for the stems to get cooked.-28 Nov 2011

This is a perfectly written recipe. Easy execution and just a few, basic ingredients lend an elegant simplicity I appreciate. I used grapeseed oil rather than vegetable oil, basically because I had it on hand to use. I also did not cook the garlic in the oil (never do). I added it to the bok choy about half way through the cooking time. I'm happy to be the first to review this delicious and dependable side dish which I served with Asian Grilled Chicken and Classic Fried Rice, recipes also from this site.-21 Sep 2011

I made this with one head of regular (not baby) bok choy and two cloves crushed garlic. It really wasn't enough so I added a bunch of spinich. It was SO simple and delicious, with and without the spinich. Will definitely make again.-04 Oct 2011

Braised Baby Bok Choy with Garlic, Ginger, and Soy Recipe

Soak bok choy in a large bowl of cold water, swishing to loosen any grit. Drain, cut in half lengthwise, and dry carefully with paper towels. Heat oil in a large, heavy-bottomed saucepan or Dutch oven over high heat until shimmering. Add halved bok choy, cut side down, working in batches if necessary to avoid crowding pan, and sear until deeply browned, about 6 minutes. Remove to a large plate or sheet pan.

Lower heat to medium and add ginger and garlic, stirring constantly, until fragrant, about 30 seconds. Add water and vinegar and bring to a simmer, stirring and scraping bottom of pan with a wooden spatula or spoon to loosen any browned bits. After 1 minute, add soy sauce and brown sugar. Add bok choy back to pan and cook, uncovered, until bok choy leaves are wilted and stems are crisp-tender, 6-8 minutes. Remove bok choy to serving platter.

Continue to cook liquid in pan over medium heat until it reduces to a glaze of desired consistency, 6 to 8 minutes. Spoon glaze over bok choy and garnish with sesame seeds and chives. Serve with hot cooked rice, if desired.


How to Prepare Bok Choy

Preparing bok is very easy but one thing to look for is dirt. You want to make sure every leaf is clean otherwise the little grains of dirt will end up ruining your dining experience (no one has ever said “yum!” while chewing on sand).

  • If you are using baby bok choy, no cutting is needed. For regular size bok choy, trim the end where the leaves connect, or you can just break off the leaves one by one with your hands.
  • Fill a bowl with water and add the bok choy. While soaking the leaves, rub them to remove all the dirt and transfer them to a strainer.
  • For baby bok choy, I find it’s easier to clean them one by one under a running tap. That’s because a lot of dirt collects at the bottom, where the bulb is, so you want to make sure to carefully open the bulb and clean between the leaves. Transfer the baby bok choy to a strainer.
  • Rinse the bok choy and drain well.
  • Grab a paper towel a pat the bok choy dry. This step is optional but I find that it helps the bok choy cook faster and be less watery.

Now that your bok choy is ready to cook, let’s take a look at the ingredients you will need to make this stir fry.


6 cloves garlic, peeled and roughly chopped

1. Wash the bok choy well and cut lengthways into quarters.

2. Bring about two litres of water to the boil in the wok and add the salt and oil. Add the bok choy and cook for about 2 minutes until tender. Remove with tongs, drain well and place on a warm plate. Discard the water and return the wok to the heat. Add the remaining oil and fry garlic until lightly browned.

3. Add the Shaoxing wine, soy sauce, stock and sugar and bring to a simmer. Taste and adjust seasoning. Combine cornflour with 2 tbsp of cold water and drizzle enough of the mixture into the wok while stirring to thicken the sauce to a silky consistency. Remove from the wok and serve.

Serve with steamed rice alongside a stir-fry such as this Chinese chicken with cashew nuts.
